Easy White Trash Casserole

Today’s Best Recipe is White Trash Casserole.

This Cheese and Potato Casserole has a history at our house.

It’s one of my favorite meals.

I consider it to be classic comfort, packed with corn, cheese, meat all coated in a thick and creamy sauce.

It’s a meal everyone loves!  

How it came to be?

As a newlywed, I tried to make amazing meals for my husband.

Each meal was met with a comparison to how some former girlfriend of his made the dish.

It drove me mad.

I refused to make Spaghetti Sauce for 7 years because I only had to mention it and I’d hear, “It won’t be as good as ____; she’s Italian”.

I wouldn’t make Northern Beans because “my mom makes the best”.

So? When he started talking about Shepherd’s Pie and this girl he dated, I decided I’d had enough and rather than deprive myself of things I liked, I took matters into my own hands.

I spent months making this recipe, and each time he’d compare it to “the girl” he dated.

I just kept putting it in front of him.

Finally, one day, I served it and he never said a word.

I knew it was perfect.

“The Girl” he dated? I thought her to be the epitome of “white trash”…and so, to pay tribute and remind him, we now call this meal “White Trash Casserole”! 😉

Easy White Trash Casserole

Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes
Serves 8

EASY White Trash Casserole Recipe Ingredients:

1.25 pounds ground beef
1 can cream of mushroom soup
1 can diced green chiles
1 can corn
1 bag frozen tater tots
1-1/2 cups cheddar cheese

EASY White Trash Casserole Recipe Directions:

Brown the Meat:

Preheat the oven to 425 degrees.

Spray a 13×9 baking dish with non-stick cooking spray.

In a large skillet, over medium heat, brown the ground beef, about 5 minutes.

Drain the grease.

Make the Casserole:

In a large mixing bowl, combine the soup, chiles, corn, salt, pepper, and meat and stir until well mixed.

Pour mixture into prepared baking dish.

Top the mixture with tater tots.

Bake:

Bake in preheated oven for 30 minutes until bubbly and the tater tots are golden.

Let rest 5 minutes before serving.

Pro Tip:

The Tater Tots will be crisper if you stand them on the smaller end, rather than rest them on their sides.
