Pina Colada Ice Cream Recipe

My kiddos love the flavor of Pina Colada.

We’ve taken those tropical flavors of coconut and pineapple and created a Pina Colada Ice Cream that will have you searching for the beach and the sunset!

This ice cream is everyone’s favorite cocktail, piña coladas, in the form of ice cream.

It’s delicious any time, but especially on a hot summer day.

This recipe uses a no-cook custard ice cream base.

It’s ice cream made with simple, accessible ingredients.

Crushed pineapple: Crushed pineapple does its part to add texture and flavor to the ice cream. 

Coconut milk: Don’t skimp here. Use full-fat coconut milk as it helps give that sought-after coconut taste to the ice cream. 

Cream: This recipe uses half and half and heavy cream or heavy whipping cream. You can use whatever type of cream you want, however, for best results it needs to have 35% fat content. 

Note: I find using a mixture of half and half with heavy cream and light coconut milk with coconut cream yields a rich and creamy ice cream. As always, you can modify it to your own preferences.

Sugar: This will bring out the coconut and pineapple flavors and give some sweetness.

Shredded coconut (optional): Try toasting additional shredded coconut for garnish with toasted coconut flakes and to add to the flavor.

Want it more “Adult’?

Add Coconut rum: Use any coconut rum you like with an alcohol volume of about 21%. Add too much (more than three tablespoons) and you run the risk of the ice cream not setting. For higher alcohol content, say 40%, you’ll need to reduce the volume to under two tablespoons to allow the ice cream to set. 

You can also use a teaspoon of rum extract if you prefer.

Pina Colada Ice Cream Recipe

13 ounces coconut milk

1 (12 oz.) can crushed pineapple, drained

1/2 package shredded coconut

1 quart half and half

1 pint whipping cream

1 can condensed milk

4 eggs, beaten well

2 cups sugar

1 teaspoon vanilla extract, optional

How to Make Pina Colada Ice Cream:

Mix coconut milk, condensed milk, sugar, and eggs in a large bowl.

Beat well; add cream and half-and-half.

Place in ice cream machine.

It takes around 20-45 minutes to churn ice cream in an ice cream maker.

It should be the consistency of soft serve ice cream when done.

During the last five minutes add crushed pineapple and shredded coconut. For best results, follow our ice cream maker’s manufacturer’s instructions.

For best results, place in a freezer tight container or an airtight container (a resealable bag for the freezer works) and place in the freezer for 30 minutes to an hour.

Garnish with toasted pineapple or fresh mint leaves.

Tips for creamy delicious ice cream:

Homemade ice creams need a good 10-15 minutes to sit on the counter at room temperature after freezing to soften before serving.
