Substitutions:

*The rosemary is optional. If you are looking for substitutions, basil or thyme is excellent.

Whole grain mustard is my personal preference, however, any mustard works. You can use brown mustard, yellow mustard, or Dijon mustard.

Real maple syrup, or pure maple syrup is my choice, but any maple syrup works. You can also substitute with honey.

Pan Seared Mustard Maple Glazed Chicken Instruction:

You can pan sear this chicken. You would heat an oven-proof skillet over medium high heat with 1 Tablespoon olive oil or butter, for 2 minutes. Once the pan is hot, place your chicken in the hot skillet and reduce heat to medium heat and cook for 4 minutes on each side until golden brown. Remove chicken. Deglaze the pan with the rice vinegar to scrape up the browned bits and add to step 3 above in the pan. Return chicken to oven-proof skillet and place in preheated oven. Cook for 20 minutes or until chicken cooks to 165 degrees internally. Remember to spoon sauce over chicken halfway through baking.

Cooking Tip:

For a more even cooking, you may wish to place chicken breast between two sheets of waxed paper, or in a resealable baggie and use a meat mallet to pound chicken to even thickness.
