Try this Easy Instant Pot Artichokes Recipe next time you’re craving the flavor of artichoke, but don’t want the hassle of boiled, splashed water, an hour of cooking time!
We love steamed artichokes. I don’t like the mess from the artichoke water and heating the entire kitchen is not something that makes me want to make them often.
I recently learned that artichokes are from the Thistle family and the edible portion of the plant consists of the flower buds before the flowers come into bloom.
My husband showed me the plant in our neighbor’s yard, and we watched as the artichoke grew, and the structure changed to a coarse, form that would not be good eating.
Artichokes were brought to the United States in the 19th century, to Louisiana by French immigrants and to California by Spanish immigrants.
The phytonutrients in artichokes provide potent antioxidant benefits.
In a 2006 study conducted by the US Department of Agriculture and published in the American Journal of Clinical Nutrition, it was shown a serving of artichokes provides greater antioxidant benefits per serving than many other foods traditionally considered to be antioxidant-rich such as dark chocolate, blueberries, and red wine.

Prepare the Artichokes:
If you’re not familiar with how to cook artichokes, it’s easier than you might think.
Especially when using a pressure cooker.
Artichokes look intimidating and beautiful.
To cook these gorgeous green orbs, cut the stem off above the lower leaves.
Next, trim about 1/4 inch off of each petal.
Use kitchen scissors and clip off the top of each petal.
Pull off any smaller leaves towards the base and on the stem.
Using a bread knife cut 3/4 inch to 1 inch of the top of the artichoke.

This is where the Instant Pot comes in handy.
I can cook four large artichokes in 30-minutes in the Instant Pot.
There is no heating up the kitchen, no water to boil.
The results are delicious artichokes that have amazing flavor and are cooked to perfection.
We’ve made this at least five times this summer, and the kiddos insist I make them more.
Here’s how easy it is:
Ingredients Checklist:
- 4 large artichokes (prepared as mentioned above)
- 1 clove garlic, pressed to release flavor
- 1/2 cup chicken broth or water
- salt and pepper to taste
How to Make Instant Pot Artichokes:
Pour 1/2 cup water in the bottom of InstantPot
Add the metal rack to elevate the artichokes
Place garlic clove in the water at the bottom of InstantPot
Wash and dry the artichokes
Add salt and pepper to artichokes to your taste
Set all four artichokes in Instant Pot
Place lid on Instant Pot and use the manual setting for 30-minutes
Note: We have had success at 30-minutes but time may vary depending on the size of artichokes.
When you’re finished, why not give your Instant Pot a deep clean.
Serve with Garlic Butter:
- 8 tablespoons unsalted butter
- 2 cloves garlic, grated
How to Make Garlic Butter:
- In a small saucepan, over medium heat, melt the butter.
- Ttir in the grated garlic, and simmer for 1 minute.
- Remove either garlic butter from the heat.
