Ingredients Checklist:

Makes about 6 cups.

1 Tablespoon butter

1 cup sliced fresh mushrooms

1/2 chopped onion

1/2 cup green or red pepper, cut in 1-inch strips

3/4 cup chopped celery

1 clove garlic, minced

1/2 teaspoon dried basil leaves

1 can (10.5 ounces) Cream of Chicken or Cream of Broccoli Soup

1 can (10.5 ounces Condensed Chicken Broth

1 3/4 cups milk

1 1/2 cups cut up, cooked chicken

1/8 teaspoon black pepper

1/4 teaspoon ground nutmeg

1 cup broccoli florets

1 1/2 cups sharp cheddar cheese, optional.

How to Make Creamy Chicken Broccoli Soup:

In a 2-quart saucepan, over medium heat, melt butter, add the mushrooms, onion, celery, pepper, garlic, and basil and saute until vegetables are tender, stirring occasionally.

Stir in soup and broth until smooth.

Add milk, chicken, black pepper, and nutmeg.

Add broccoli and heat to boiling.

Turn heat to low.

Cover, and cook 5-minutes or until broccoli is tender.

Divide into bowls, top with shredded sharp cheddar cheese, and serve with crusty bread.

Store leftovers in an airtight container.

To cook Chicken:

Add 1 Tablespoon oil to a 10-inch skillet and heat on medium-high heat for 1 minute.

Season 2 boneless skinless chicken breasts with salt and pepper.

Add chicken breasts to hot oil and cook for 3 minutes and turn chicken over in pan.

Allow to cook 3-minutes on this side.

Chicken should be golden brown and have an internal temperature of 165-degrees Fahrenheit.

Add Ins:

1 Wild Rice Blends pouch, prepared to make a creamy chicken and wild rice soup.

1 tablespoon Worcestershire sauce

1 bay leaf

Stir in 2 cups of grated cheddar cheese at the end, with the broccoli, until melted to make this a chicken broccoli cheese soup.

Substitutes:

Save time and use rotisserie chicken

1 1/2 cups vegetable stock, or chicken stock in place of the can of Condensed Chicken Broth

Heavy cream in place of milk (add at the end, with broccoli)
