What is Chicken Marsala?

Chicken Marsala is my favorite dish.

This Italian dish is from Sicily and made from chicken cutlets, mushrooms, and Marsala wine (a dark and sweet dessert wine that is close to sherry). It’s indulgent, rich, and beautiful.

The delicious dish’s name originates from the Marsala wine used to create the wine sauce.

Note: There are two variations of this wine dry and sweet.

Only use the dry Marsala when creating Chicken Marsala for best (and edible) results.

The popularity of Chicken Marsala dates back to the 19th Century when it most likely originated with English families living in the Sicily region, where Marsala wine is produced.

Olive Garden Stuffed Chicken Marsala

Copycat Olive Garden’s Stuffed Chicken Marsala Recipe Ingredients:

  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 cup olive oil
  • 1/2 stick butter
  • 4 skinless boneless chicken breasts halves
  • 1 cup sliced fresh mushrooms
  • 1 medium onion, sliced thin (optional)
  • 1/2 cup dry Marsala wine

Stuffing:

  • 1/2 cup provolone or gouda shredded cheese
  • 8-oz package mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1/2 cup breadcrumbs
  • 1 tsp fresh garlic, minced
  • 1/4 tsp red pepper flakes, crushed
  • 2 Tbsp sun-dried tomato flakes (drain first if in oil)
  • 1/3 cup green onions, thinly sliced
  • 3/4 cup sour cream (6 oz)
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Copycat Olive Garden’s Stuffed Chicken Marsala Recipe Directions:

  • Combine all cheese stuffing ingredients in a mixing bowl.
  • BUTTERFLY thickest section of chicken breasts to create 2 lobes.
  • Pound each breast between 2 sheets of plastic wrap until ¼” – ½” thick.
  • PLACE flattened chicken breasts on a plate and place the desired amount of stuffing on one lobe of each chicken breast.
  • Gently press stuffing down so it resembles a hockey puck.
  • FOLD over another lobe of chicken breast; does not have to seal.
  • COMBINE in a medium bowl the flour, salt, pepper, and oregano and blend well.
  • HEAT the oil and butter in a large skillet or large sauté pan over medium heat until bubbling lightly.
  • DREDGE the chicken in the flour mixture and shake off the excess.
  • COOK the chicken for about 2 minutes on the first side, until lightly brown.
  • After you turn the breasts to the second side to cook, add the mushrooms and onion (optional) around the chicken pieces.
  • Cook for about 2 minutes more, until the chicken, is lightly browned on the second side.
  • Stir the mushrooms.
  • Deglaze the pan by adding the wine to the mushrooms and gently scrape the bottom of the pan to remove the sticky chicken drippings.
  • Cover the pan, and simmer for about 10 minutes, until the chicken is cooked through and the center of the chicken reaches 165-degrees F.
  • Serve and enjoy this Copy Cat Olive Garden Stuffed Chicken Marsala with mashed potatoes.

Marsala Wine Substitute:

Just food for thought, while you can substitute the marsala wine, the results will not be exactly the same.

  • For a non-alcoholic Substitute: 1/4 cup of white grape juice + 1 Tablespoon vanilla extract + 2 Tablespoons Sherry vinegar.
