Super Easy Coffee Cake Recipe

Cook time: 20 mins

Total time: 20 mins

Serves: 8 large pieces

Ingredients

  • 1 box yellow cake mix
  • 1 box butterscotch pudding
  • 1 box vanilla pudding
  • 1 cup vegetable oil
  • 1 cup water
  • 4 large eggs

Cinnamon Sugar Filling:

  • 1 cup light brown sugar
  • 3/4 cup all purpose flour
  • 1 tablespoon ground cinnamon

Streusel Crumb Topping (optional)

This part is optional.

Sometimes, I just sprinkle with powdered sugar or pour a glaze over the top.

  • 6 tablespoons butter, melted
  • 1 cup light brown sugar
  • 1 1/2 tablespoons ground cinnamon
  • 1 cup all purpose flour

How to Make a Super Easy Coffee Cake:

  1. Preheat oven to 350-degrees
  2. Prepare a bundt pan with non-stick spray.
  3. Make the cinnamon filling: In a small bowl combine sugar, flour, and cinnamon and use a fork, whisk, or pastry blender to mix until combined. Set aside.
  4. In a medium bowl or mixing bowl of a stand mixer, mix cake mix, pudding, oil, and water. Add eggs one at a time until well mixed, scrape the sides of the bowl as necessary.
  5. Pour a third of the cake batter in the bundt pan, followed by a layer of a third of the brown sugar mixture, repeat twice more.
  6. In a separate bowl combine all the streusel topping ingredients until the mixture resembles coarse sand.
  7. Evenly sprinkle the crumb topping on top of the batter.
  8. Bake in the preheated oven, on the center rack, for 20 minutes.
  9. Lower the oven temperature to 325 and continue baking for 40 more minutes, or until a cake tester comes out clean.
  10. Remove cake from oven and set on a wire rack to cool to room temperature.

I separate them into 8 Tupperware containers for easy snacking, take them for a coffee break at work.

You can store it in an airtight container or wrap it with plastic wrap or aluminum foil for up to three days.
